Kumbalanga Pachady (Winter Melon/ Ash Gourd Curry)

Pachadi is a traditional Kerala side dish. It is an important part of Onam/Vishu sadya, Keralites Vegetarian Feasts. Pachady is a very simple to make and it is mildly spicy dish. This dish can be made with different vegetables and fruits like winter melon/ ash gourd , cucumber, bitter gourd, beetroot, pineapple, mango, apple etc….and it is a combination of yogurt and coconut paste with mustard seeds, ginger and green chilly . Here I present to you Kumbalanga/ Winter melon or Ash gourd Pachadi. Personally I like its texture and taste.Hmmmmmm it is Fantastic! Try this simple delicious Kumbalanga Pachadi recipe and enjoy 🙂

Ingredients For Kumbalanga Pachadi

Ingredient Quantity Notes
Kumbalanga/ Winter Melon/ Ash Gourd 3 cups Peeled and Diced evenly
Yogurt 1 1/2 cup Thick and whisked
Coconut paste Check the below recipe
Salt As per your Taste
Water ¼ Cup

Ingredients For Coconut Paste

Ingredient Quantity Notes
Grated Coconut 1 Cup Fresh
Mustard Seed 1/2 Teaspoon
Ginger 2 inch piece chopped
Shallot/ Small Onion 1 chopped

Ingredients For Garnishing/ Tempering

Ingredient Quantity Notes
Coconut Oil 1 Tablespoon
Mustard seeds 1 Teaspoon
Shallots/ Small Onion 3 Chopped Finely
Dry Red Chilly 3 Cut into small pieces/Use as whole
Curry Leaves Few

Method For Kumbalanga/ Winter Melon Pachadi

• Heat a sauce pan, add diced winter melon, chopped green chilly, ¼ cup water and salt as per your taste. Cook until the winter melon become soft. Do not over cook. Turn of the heat and leave it to cool.
• Grind ingredients for coconut paste with little water and make a smooth paste. Add it to the cooked winter melon, mix well. Add thick and whisked yogurt in it and mix again. Taste the gravy and add salt if required. Keep aside.
• Heat Oil in a frying pan. Pop mustard seeds. When it’s popped, add chopped small onions, dry red chillies and curry leaves and fry till crispy and brown. Pour it over the pachadi gravy. Mix well. Serve hot or cold with rice or chappathi. Enjoy 🙂
