Tri Veg Thoran/Upperi ( Stir fry with Three Vegetables and Coconut)

Thoran / Upperi (Stir Fry with Coconut and Spices) is a typical tasty Keralite’s dish served with steamed rice. It is also a main part of Onam/Vishu Sadya (Keralites Vegetable Feasts). Tri Veg Thoran (Stir Fry with Three Vegetables and Coconut) is an interesting recipe from my kitchen. I made this recipe with three colours and the three attracting colours reminds me of my mother land’s tri colour flag (Threvarnna Pathaaka). It always gives me a proud and an energetic feeling….Yes! I am a proud Indian! Where ever I am it gives me an awesome feeling 😉 Hmmmm….I think I am too talkative and emotional in this subject…sorry guys… We will come back to the Tri Veg Thoran 😉 Tri Veg Thoran is a great combination of carrot, french beans, cabbage, coconut and some Indian spices like turmeric powder as well as roasted cumin seed powder. Normally I prepare the roasted cumin seed powder at home. It gives a special taste and fragrance. Tri Veg Thoran is a healthy dish because it contains three nutritional vegetables and turmeric (It has many medicinal values and health benifits). Ingredients For Tri Veg Thoran

Ingredients Quantity Notes
Oil 1 Tablespoon Adjust as per your taste
Mustard Seeds ½ Teaspoon
White Lentil (uzhudhu daal) ½ Teaspoon
Red Dry Chilly 2 or 3 Cut into small pieces
Curry Leaves Few
Big Onion 1 Big Chopped Finely
Garlic 3 cloves Chopped Finely
French Beans 1 ½ Cup Chopped Finely
Cabbage 1 ½ Cup Chopped Finely
Carrot 1 Cup Grated Finely
Grated Coconut 1 Cup
Shallots/Small Onion 1 or 2 chopped
Turmeric Powder ¾ Teaspoon
Roasted Cumin Seed Powder ¾ Teaspoon
Green Chilly 2 or 3 Chopped (Adjust as per Your taste)
Salt As per your taste

Method For Tri Veg Thoran

• Grind grated coconut with turmeric powder, roasted cumin seed powder, chopped green chilly, chopped shallots and few curry leaves. Make a smashed paste form (Do not grind too long. Just 2 or 3 spins) and keep aside.
• Heat oil in a pan. Pop mustard seeds. When it’s popped add white lentils and fry well. The lentils turn golden brown and chopped onion and garlic and fry well. Add red dry chilly pieces and curry leaves. Fry until golden brown.
• Add chopped French beans, carrots and cabbage accordingly. Add salt as per your taste and sauté well. Cover the pan and cook 5 minutes.
• Uncover the pan add Smashed coconut paste and mix well. Cover again the pan for further 5 minutes. Uncover and sauté well. Fry thoran until dry form. Turn off the heat. The tasty Tri Veg Thoran ready! Serve hot or cold with boiled rice or chappathii. Enjoy 🙂
