Simple Vegetable Fried Rice ( Kerala Style )

It was a rainy Saturday evening. After a hot tea I asked myself that usual question. What can I prepare for dinner? Every homemaker’s primary question 😉 Since last week we had some traditional Kerala food like Aviyal, Thoran, Samabar etc so I thought of preparing something different this time. I went to search the refrigerator,carrots and beans were the only vegetables that caught my eye. I planned to cook some Simple Vegetable Fried Rice with it. Because my kids like vegetable fried rice with chicken curry. I already have some leftover chicken curry which I prepared for lunch. I can eat vegetable fried rice with Papadum and Salad (I decided to sacrifice non-vegetarian food throughout the lent season) I started to cook a Simple Vegetable Fried Rice with the following recipe.

Ingredients For Simple Vegetable Fried Rice

Ingredient Quantity Notes
Basmati Rice 2 Cups choose any good quality rice
Water 4 cups For cooking rice
Carrot 2 Medium Size Sliced lengthwise thinly
Beans 12 to 15 Numbers Sliced lengthwise thinly
Big Onion 1 Chopped finely
Ginger and garlic Paste 2 Tablespoon
Cinnamon 2 sticks cut into small pieces
Cardamom 4 to 5 Numbers
Cloves 4 to 5
Bay Leaf 3 to 4 leaves
Fennel Seeds A Pinch
Black Pepper Powder 1 Teaspoon
Soya Sauce 2 Tablespoon
Ghee/ Oil 2 Tablespoon Adjust as per  your taste
Cashew Nuts 10 Numbers For garnishing purpose
Raisins 10 Numbers For garnishing Purpose
Salt As per your taste
Water As per your taste.

Method For Simple Vegetable Fried Rice

1. Clean and soak rice 10 to 15 minutes and drain it. Heat a sauce pan. Add water for cooking rice. Add salt as per your taste. When it’s  boiled add drained rice and cover it. Cook rice  in a medium heat. When its cooked turn off the heat. Use a fork and fluff rice well (Using fork prevents rice from sticking to one another). keep aside.


2. Heat ghee in a woke or big pan. Add cashew nuts  and raisins. Fry until golden brown and keep aside for garnishing purpose.

3. Add cinnamon, cardamom, bay leaves and fennel seeds in the remaining ghee and sauté well. Add chopped onions and fry well. When its golden brown add ginger garlic paste and sauté well. Add sliced vegetables and fry  well. Add salt for vegetable. Cover it and cook 3 to 5 minutes. When it’s cooked add boiled rice and mix well. Add soya sauce and pepper powder and fry continuously. Sprinkle some ghee if required it will keep the rice moist and fluffy. fry well.

4. When the soya sauce and pepper powder mixed well with rice and vegetables, add fried cashew nuts and raisins for garnishing and mix well. Serve hot with chicken curry or any spicy masala curry, pappad and vegetable salad. Enjoy!
