Cardamom/ഏലക്ക/ஏலக்காய்/इलायची is an aromatic and sweet flavored spice that is native to India (Malabar coast) and now grown also in islands of the Pacific, Central America and parts of Asia . It is one of an expensive spice and regarded as the queen of spices.
Cardamom is one of the most common spices used in Indian households because it has an essential role of Indian meals, sweets, drinks and desserts preparations.
Cardamom pods come in three colors in market such as black, green and white. Normally green colored cardamoms are preferred for Indian cooking, it has a strong, unique spicy-sweet taste.
Cardamom has a lot of health benefits too. They are good for digestion, depression, oral health, cold and flu, blood pressure, cancer etc…
My kitchen, I stored cardamom in pod forms and it is used in Biriyani ,Veg fried Rice/Pulav, Masala Chai, lassi,Homemade Garam Masala powder, Homemade Meat Masala, Curry, Payasam/Kheer, laddu etc recipes. Choose more cardamom recipes in your daily life and stay healthy 🙂

I LOVE cardamom! I never knew it came in 3 different colors though. And I love the site. I am a fan of Indian cooking and since you have some recipes that incorporate cardamom I will definitely be back!
